With an unusual square shape and stunning rind it almost looks like Taleggio and Buffalo Mozzarella had a child! Water Buffalo milk is much higher in fat and protein then cow / sheep / goat, resulting in a rich, flavor cheese. With a creamy yet somewhat rubbery texture, it is pungent enough to stand up to other strong cheeses but not so bold as to overwhelm them.

Ingredients & Storage Tips

Ingredient(s): Pasteurized buffalo milk, salt, rennet, cultures
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Flavors & Uses

For a cheese plate serve with a Fourme d'Ambert and Manchego 12 month. Or pair with a Moliterno al Tartufo and Red Cow Parmesan Reggiano. Sides that work include sliced Bresaola, dried figs, crackers and garlic stuffed olives.
