With a white, puffy fleurie rind and creamy interior, this unctuous cheese is a favorite when spread on crackers or bread. Drizzle a bit of delicious French olive oil and sprinkle some cracked, black pepper over a smear if you want to turn it into an amuse bouche.

Ingredient(s): Pasteurized cow milk, cream, salt, lactic starter, rennet (animal)
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Flavors & Uses

For a cheese plate serve with a Moliterno al Tartufo and Humboldt Fog. Or pair wtih a La Bonde d'Antan and Ossau Iraty. Sides that work include pickles, chorizo, crackers or a baguette and some Madrange ham.
