Ingredient(s): Pasteurized cow milk, salt, cheese culture, rennet (vegetarian), annatto
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Flavors & Uses

For your next party pair this cheese with a Vacherin and St. Agur or Cashel Blue. Or go with a Leyden and Fourme d'Ambert. In terms of application try melting this aged Gouda in a sandwich along with some ham, lettuce and tarragon mustard. Or try this gouda on a cheese board with some Dalmatian Orange Fig Spread, sweet soppressata, Granny Smith Apples and pickles.
